Quick pickled onions


Quick pickled onions are a delicious accompaniment to beans of all kinds, tacos, salads, burritos, and so many other dishes. We love them in our house. I like to keep a jar in the fridge to dress up lunches and dinners.

1/2 cup apple cider vinegar
1 tbsp sugar
1 1/2 tsp sea salt
1 cup filtered water
1 red onion, quartered and thinly sliced

Whisk vinegar, sugar, salt, and water in a jar until sugar and salt dissolve. Add onion and shake to combine. Let sit at room temp for at least 1 hour. Store in the refrigerator and use within about 2 weeks.
