Halibut fish tacos

Local halibut is in season in Maine right now. Halibut is not a fish we eat often but when it’s caught locally, you can’t get any fresher. I’ve used both halibut filets and steaks for this recipe and they’re both delicious. Sometimes I’ll make the halibut steak with steamed asparagus and a nice potato for dinner and then use the left over halibut the next night for tacos.

1 lb halibut filet or steak
2 tbsp olive oil
1 – 2 tsp ground cumin
salt & pepper to taste
1/2 lime juiced
1/2 lime quartered
6 corn tortillas
quick pickled onions
red cabbage slaw
cilantro lime rice

Heat the olive oil in a cast iron or heavy bottom frying pan. Season the fish with the cumin, salt, and pepper. Add the fish to the pan, pour the lime juice over it, and cook for about 3 – 4 minutes. Flip the fish and cook on the other side for 3 – 4 minutes or until it’s cooked through most of the way. Remove from heat, cover, and allow to rest for 5 – 10 minutes. Serve on a corn tortilla with a lime wedge, pickled onions, slaw, and guacamole…and maybe a side of cilantro lime rice.
