Red cabbage slaw

As I’ve mentioned before, we eat a lot of tex mex and Mexican inspired food in our house. Especially when the weather starts to turn for the better. The kids love Mexican fare because it means putting a whole bunch of toppings on whatever it is we’re eating. Add to that the fact that many of them are fun colors like pink and purple and you’ve got a kid pleasing dinner.

Taco night almost always includes a simple, quick red cabbage slaw to put on top. I usually make this earlier in the day to give the flavors time to develop a bit. Plus, I don’t like to have too many things to prep right at dinner time. If you don’t have red cabbage, a green cabbage will work, too.

1 small red (or green) cabbage, shredded
1/2 cup cilantro, chopped
1/4 cup quick pickled red onions (optional)
1 lime, juiced
1 tablespoon mayo
1/2 teaspoon sea salt

Place all ingredients in a mixing bowl and toss until combined. Chill in the refrigerator for at least an hour. Keeps in the fridge for a few days.
